Ingredients:
- 2 cups of white rice.
- 1 cup of canola oil.
- 2 diced onions.
- 6 cloves of garlic.
- 4 tablespoons of chopped chipotles in adobo.
- A pinch of salt.
- A pinch of pepper.
- 4 cups of vegetable or chicken broth.
- 2 cans of pinto beans.
- 2 cups of Monterey Jack cheese.
- 2 cups of Cotija cheese.
- 30 corn tortillas.
- 4 cups of rotisserie chicken.
- Before starting, you should chop any ingredient which needs to be chopped to save some time and make this recipe even easier.
- To begin with, preheat the oven to 425°F. Take a saucepan and set it over medium heat. Add 5 tablespoons of canola oil and heat it up. Cook the chipotles, the garlic, and the onion for about 5 minutes. Add the white rice, a pinch of salt, and pepper. Stir a little bit and cook the preparation for about 3 minutes.
- After that, pour in the broth and bring it to a simmer. Cover the saucepan with a lid and reduce the heat to low. Cook it until the rice is tender and most of the liquid is absorbed. Take the saucepan out of the heat and let it sit for about 5 minutes. Fluff the mixture with a fork.
- Then, put the beans into a food processor and pulse them until they become smooth. Add both types of cheese.
- Take the tortillas and spread a little bit of the bean mixture in the center of each of them. Add the rice mixture and the chicken. Make the rolls and put them over a baking sheet on a baking plate. Brush them with the rest of the oil.
- Finally, bake the tacos until they become golden brown and the filling is warm enough.
