Mexican cuisine is one of the best options around the globe since it has everything you need to enjoy a meal: it is colorful, flavourful, and famous for its intense spices.

A little bit of history

Do you know why Mexican cuisine tastes so good? We should go a little bit back in time.

The history of this country’s food can be traced over two thousand years, where we can find its beginning in Mesoamerican cuisine. The Mayans and Aztecs strongly influenced the cooking methods we currently see in Mexico.

As these were communities really dedicated to agriculture, we can notice a clear link between one of their main activities and the crops they cultivated, and, as a result, their cuisine.

Some of these ingredients were avocados, tomatoes, beans, corn, chilli pepper, and cacao.

Of course, there have been other influences throughout history. For example, after the Spanish Conquest of the Aztec Empire, the Spaniards introduced many other staples, such as beef, chicken, cheese, milk, and rice.

Simple and Tasty

As you can see, all of them are very simple ingredients that, when combined, can create very tasty dishes.

Let’s take the example of rice. Rice is a staple that can be paired with almost any other ingredient to make exquisite dishes.

Vegetables, meat, fish, sauces, anything you think of goes well with rice.

Coming Mexican food Going to the kitchen

The recipe I bring you today is so easy you won’t believe the result is real. These rice and beans tacos dorados will make you look like the kitchen master and you will only need some daily ingredients you surely have at home.

When I tell you it is easy, please believe me. It is going to take you less than an hour!

Ingredients:

  • 2 cups of white rice.
  • 1 cup of canola oil.
  • 2 diced onions.
  • 6 cloves of garlic.
  • 4 tablespoons of chopped chipotles in adobo.
  • A pinch of salt.
  • A pinch of pepper.
  • 4 cups of vegetable or chicken broth.
  • 2 cans of pinto beans.
  • 2 cups of Monterey Jack cheese.
  • 2 cups of Cotija cheese.
  • 30 corn tortillas.
  • 4 cups of rotisserie chicken.
Instructions:

  1. Before starting, you should chop any ingredient which needs to be chopped to save some time and make this recipe even easier.

  2. To begin with, preheat the oven to 425°F. Take a saucepan and set it over medium heat. Add 5 tablespoons of canola oil and heat it up. Cook the chipotles, the garlic, and the onion for about 5 minutes. Add the white rice, a pinch of salt, and pepper. Stir a little bit and cook the preparation for about 3 minutes.

  3. After that, pour in the broth and bring it to a simmer. Cover the saucepan with a lid and reduce the heat to low. Cook it until the rice is tender and most of the liquid is absorbed. Take the saucepan out of the heat and let it sit for about 5 minutes. Fluff the mixture with a fork.

  4. Then, put the beans into a food processor and pulse them until they become smooth. Add both types of cheese.

  5. Take the tortillas and spread a little bit of the bean mixture in the center of each of them. Add the rice mixture and the chicken. Make the rolls and put them over a baking sheet on a baking plate. Brush them with the rest of the oil.

  6. Finally, bake the tacos until they become golden brown and the filling is warm enough.

Cook’s Tips

Always remember to drain and rinse the pinto beans very well so that they are ready to be cooked.

Another good idea is to warm up the tortillas a little bit so that they are more flexible.

Master’s Tip If you want to take this recipe to another level, you should definitely try it with avocado cream. It really enhances the dish's flavor and adds a very interesting twist to it.
