  • 2½ cups of chicken broth.
  • 2 cups of shredded cheddar cheese.
  • 2 cloves of garlic, minced.
  • ½ medium yellow onion, finely chopped.
  • 1 teaspoon of salt and pepper.

  • In a large skillet, sauté the onions in two tablespoons of olive oil over medium heat.
  • Season the chicken with salt and pepper.
  • When the onions soften, increase the heat to medium high and add the chicken to the skillet.
  • Brown the chicken and add the garlic.
  • Cook for 1 minute more.
  • Push the chicken to one side of the pan and add the additional teaspoon of olive oil to the other side.
  • Add the uncooked rice to the olive oil and sauté for a couple of minutes.
  • Add the chicken stock to the pan and bring the mixture to a boil.
  • Lower the heat to low and cover the pan with a lid.
  • Cook the chicken and rice mixture covered for about 12 minutes.
  • Sprinkle the broccoli evenly over the chicken and rice mixture and stir to combine.
  • Continue cooking until broccoli and rice are tender.
  • Remove from heat and stir in 1/2 cup cheese.
  • Sprinkle remaining cheese on top, cover with a lid and let it stand for 1-2 minutes until the cheese has melted.
